I'm working my way slowly through a set of Irish lessons on Erin's Way http://www.erinsweb.com/gaelic7.html and I'm getting a bit confused with noun genders.

The particular lesson above lists a number of masculine and feminine nouns, no issue with the noun itself. However, under the list of feminine nouns they show several masculine nouns, bus, carr with sa e.g. sa bus, sa carr.

The question: does using 'sa' change the gender of a noun or is this poor editing/formatting of the website?

It's an editing mistake. There should be a new heading, or a space at least, before the new list of phrases starting with sa.

Sa "in the" lenites all nouns beginning with b, c, g, m, and p (except in Connemara where it causes eclipsis), regardless of gender, and appends a t to a feminine noun starting with s.
